Farmers collect crayfish raised in a lotus field in Wangqiao Village, Baoying County, Yangzhou City, May 5, 2020, which is also the first day of Lixia, Start of Summer, in accordance with China's traditional 24 "solar terms." The lotus root is one of the most widely used aquatic vegetables in Chinese cooking. By raising crayfish, one of the most popular foods in the Chinese market, farmers can increase income from both the lotus root and crayfish. As temperatures rises, local farmers are busy with management of aquatic products including crabs and wet-field agriculture.
