Huai'an, a historic city in central Jiangsu, is located at the intersection of the ancient Huaihe River and the Grand Canal. Hongze Lake, the fourth largest freshwater lake in China, is located in Huai'an.

Besides, Huai'an and Yangzhou are also known as birthplace of Huaiyang cuisine.

Speaking of Huaiyang cuisine, stir-fried eel is definitely the most famous dish.

The cooking process of this signature dish seems simple. However, it is not easy at all. Wu Mingqian, a renowned local chef, said that the key to this dish is slicing the eel.

For people of Huai’an, stir-fried eel is not just a source for cooking, it is more like a bond connecting people together.
