Jiangsu brings Huaiyang cuisine to North Europe

The traditional Chinese cuisine delegation led by the Overseas Chinese Affairs Office of Jiangsu province hosted a Huaiyang cuisine appreciation gala in Denmark, Jiangsu media reported on Nov. 15.

The five Chinese master chefs in the traditional Chinese cuisine delegation are all from Huai'an’s Huaiyang Cuisine Group of Jiangsu province. Gao Daiming, the fourth-generation inheritor of a traditional Huai’an cooking style called Gao banquet - an intangible cultural heritage in Jiangsu, introduced the culture and characteristics of Huaiyang cuisine at the gala.

Huaiyang cuisine employs a wide range of materials. The cuisine focuses on preparation and cooking methods that enhance the original flavor of the food. Huaiyang Cuisine is usually more meticulous and light.

Gao said that she comes from a family that practices traditional Chinese medicine and they applied for the intangible cultural heritage designation over 10 years ago. Among the 2,700 dishes of Chinese cuisine, the people of Huai'an contributed over 400. To date, 298 Huaiyang dishes have been recorded.
