Suzhou-style noodles a must have in summer

Noodles in Suzhou reflect local people’s life attitudes, maintaining the elegance and exquisiteness inherited from history as times go by.

Among toppings for the Suzhou-style noodles, the white pork stew is especially popular in the city in summer. It looks like a large amount of fat, but the meat melts the moment in your mouth. The skin is crispy, and the meat is anything but greasy.

The Suyuzhai Restaurant, located at No. 833 Xiangcheng Avenue of Xiangcheng District, uses high-quality pork belly to make the stew after a series of steps, with additional flavors placed in the pot to cook for four and a half hours. The soup is white also because it uses various kinds of fresh ingredients such as bones.

Delicate and chewy, the Suzhou-style noodles are also visually attractive because the noodles are arranged in the shapes of the head of Guan Yin, Goddess of Mercy, or a fish’s back.

The Suzhou-style noodles are ready after the boiled noodles are put in a bowl and then covered with white simmered toppings. The soup was clean and clear, and the noodles stay smooth.
