Rice-field eel noodle, a Huai’an delicacy

Huai’an people like to eat noodles. There are noodle restaurants on almost every street in the city, with business hours ranging from 6 or 7 in the morning to late at night every day.

It is a joyous thing for a food aficionado to enjoy authentic rice-field eel noodle in Huai’an. A bowl of rice-field eel chewy noodles is prepared by cooking fresh wild rice-field eels. The animals are the size of ballpoint pens. After cutting the eels, removing the bones, frying, stir-frying and stewing them, the eels become golden yellow with the texture of noodles. After adding the eels to stewed eel-bone soup and topping with chopped leeks, pepper powder and thick seasoning juice, the dish is complete.
