Hairy crabs available for gourmets during holiday

The delicious hairy crabs from Jiangsu province are making the annual comeback to treat the appetite of the local people in about one-month time.

The mitten crabs at a farm market in Huai’an city weigh two grams on the average with the bigger ones weighing more than three grams each, according to the crab vendors. The crabs are being sold at 40 yuan for half a kilo or 15 yuan each.

With the crabs in the final stage of unshelling, the local people will be able to savor the delicacy pretty soon.

70% of the crabs have had their shells shucked before being put on the market in one month. The earliest batch of hairy crabs will be available during the Mid-Autumn Festival which falls on September 15 this year.

The Chinese hairy crab, much sought after by gourmets, is only available in September and October. The best known and marketed crabs are the Yangcheng Lake hairy crabs. They mature between October and November and are harvested from the lake northeast of Suzhou in Jiangsu Province. Crabs from the eastern part of the lake are said to be the best.
